Deep-Dish Peanut Butter Cup Cookies

  • Makes: Makes 1 1/2-2 dozen cookies.


1/2 cup butter, softened

1/2 cup peanut butter (I used the just-peanuts stuff)

1/2 cup white sugar

1/2 cup packed brown sugar

1 large egg

1 tsp. vanilla

1 1/4 cups all-purpose flour

1 tsp. baking soda

1/4 teaspoon salt

about 2 cups chopped mini chocolate bars or 1 1/2 dozen Halloween sized peanut butter cups, unwrapped


1Preheat oven to 325F.

2In a large bowl, beat the butter, peanut butter and sugars until fluffy; add the egg and vanilla. Add the flour, baking soda and salt and stir until you have a soft dough.

3Roll the dough into walnut-sized balls, drop into a muffin tin and press them down a little, then press a peanut butter cup into the middle. Bake for about 10 minutes, or until pale golden around the edges.
