Double Chocolate Chip Muffins

  • Makes: Makes 1 dozen muffins.


1 1/2 cups flour

3/4 cup sugar

1/2 cup cocoa

2 tsp. baking powder

1/4 tsp. salt

3/4 cup milk

1/2 cup canola oil or butter, melted

2 large eggs

1 tsp. vanilla

1/2 cup chocolate chips


1Preheat the oven to 375°F.

2In a medium bowl, whisk together the flour, sugar, cocoa, baking powder and salt.

3In a large bowl, whisk together the milk, oil, eggs and vanilla. Add the dry ingredients and chocolate chips and stir just until well blended.

4Fill paper-lined muffin cups and bake for 20-25 minutes, or until domed and springy to the touch.
