1Preheat the oven to 350F.
2In a medium bowl, combine the brown sugar, honey and oil until the mixture resembles wet sand. Add the egg, vanilla and flax meal and beat with an electric mixer or by hand for 1-3 minutes, until the mixture is paler and lighter.
3Stir in the barley flour, cocoa, baking soda and salt, and then the chocolate chips. Drop by the spoonful onto a parchment-lined sheet and bake for about 10 minutes, or until the tops crack and the edges are just set. Transfer to a wire rack to cool. Makes about 1 1/2 dozen cookies.
