    That is just perfect for the season, or any time of the year for me. We made sweet potato pancakes spiked with a dash of smoked paprika yesterday and topped them with fried eggs, which caused us to talk for several minutes about how much we love sweet potatoes, and how much they’re under-appreciated. You’ve done them justice.

    Don’t worry about potatoes having the spot-light – why shouldn’t they? The sweet potatoes are stars like that. What a great way to do them. 🙂
