Zummus (Zucchini Hummus)

Yields1 Serving

 1 medium-large zucchini, cut into chunks
 1/2-1 cup chickpeas, drained (optional)
 1/4-1/2 cup tahini
 1-2 garlic cloves, peeled
 juice of a lemon
 2 Tbsp. olive oil
 1/2 tsp. cumin (optional)
 1/2 tsp. salt (or to taste)

Whiz everything in a food processor until relatively smooth. Taste and adjust seasonings. Serve immediately or refrigerate for up to 4 days. Makes about 2 cups.
