½ cup butter, at room temperature
½ cup sugar
1/2 cup packed brown sugar
½ cup molasses
1 large egg
1 tsp. vanilla
3 cups all-purpose flour
2 tsp. cinnamon
1 tsp. ground ginger
1 tsp. baking soda
1/4 tsp. salt
mini chocolate chips
shredded coconut
fruit roll-ups, cut into strips

In a large bowl, beat the butter and sugars until pale and light add the molasses, egg and vanilla and beat until well-blended. (It may look curdled – that’s OK.)

In another bowl, stir together the flour, spices, baking soda and salt. Add to the molasses mixture and stir until the dough comes together. Shape into a disc, wrap in plastic or parchment and refrigerate for half an hour, or overnight.

When you’re ready to bake, preheat the oven to 350?F. On a lightly floured surface, roll the dough out about ¼-inch thick. Cut into shapes with a gingerbread man cookie cutter, transfer to a parchment-lined baking sheet and press all over with the back of a fork to make it look like the wookie has fur. Press mini chocolate chips into the face for eyes and a nose, and a bit of coconut for a little mouth.

Bake for 15 minutes, or until pale golden and set. While still warm, place a strip of fruit roll-up across each wookie’s chest, like a bandolier, tucking the ends behind his back – it will melt slightly and adhere to the cookie.
