I know I’ve already shared these – kind of – but I think they’re worth delving into a little deeper. Because when you think of it, they really are the most perfect Christmas cookie. And they require no icing or sprinkles – all the decorating is on the inside.

My friend (ironically, a decorator) Karl came up with the idea to wrap shortbread dough around Turtles and bake them – it was his (unintentional) gift to me; a perfect Christmas package. I’ve since schemed what else could be wrapped in shortbread dough and baked – anything you might find in your stocking, really. But wrapping something else means you’re not wrapping Turtles, which would be a shame. They truly are little bundles of comfort and joy.

Turtle Stuffed Shortbread

Turtle Stuffed Shortbread

Yields1 Serving

1 cup butter, at room temperature
1/2 cup icing sugar
1 tsp. vanilla
2 cups all-purpose flour
2 Tbsp. cornstarch
1/4 tsp. salt
1 box Turtles (a dozen or two-better to have extras)

Preheat the oven to 325F.

In a medium bowl, beat the butter with the icing sugar and vanilla. Stir in the flour, cornstarch and salt. Wrap dough around Turtles, and bake for 20 minutes, until pale golden around the edges.

      Sure thing – most cookies can be frozen and are just fine!

    This would be like English chocolate caramel shortbread (or Scrumptious Lumps as we like to call them) but a lot less work..

      Yes you can use the brick-style dairy free butter, though the flavour won’t be the same!
