Turtle Stuffed Shortbread
I know I’ve already shared these – kind of – but I think they’re worth delving into a little deeper. Because when you think of it, they really are the most perfect Christmas cookie. And they require no icing or sprinkles – all the decorating is on the inside.
My friend (ironically, a decorator) Karl came up with the idea to wrap shortbread dough around Turtles and bake them – it was his (unintentional) gift to me; a perfect Christmas package. I’ve since schemed what else could be wrapped in shortbread dough and baked – anything you might find in your stocking, really. But wrapping something else means you’re not wrapping Turtles, which would be a shame. They truly are little bundles of comfort and joy.
And who doesn’t love a surprise inside?

I made these for a bake sale yesterday and they were the first to sell! These are a new Christmas cookie at our house. Delicious!

These. Are. Life. Changing. LOVE!!!! Thank you.
Hi! I was wondering what the texture of this cookie is like.. Is the shortbread chewy or crumbly? Thanks!
I made these over Christmas and they were so delicious and decadent and EASY! Thanks for an awesome shortbread recipe and idea!
Could I freeze them after making them?
Sure thing – most cookies can be frozen and are just fine!
This would be like English chocolate caramel shortbread (or Scrumptious Lumps as we like to call them) but a lot less work..
Scrumptious lumps – love it!
I make these every year, they are winners!
Hi Julie
Do you think I could make these with lactose free butter? Saw you on the news and these looked so yummy!!!!
Yes you can use the brick-style dairy free butter, though the flavour won’t be the same!
